Smoked Pulled Oyster Mushroom Sandwiches
This one is for our vegetarian friends! If you don’t have a smoker, roasting the mushrooms in the oven works just as well. 1 pound of oyster mushrooms should yield about 4 sandwiches. This is a very basic recipe so many of the ingredients can be swapped out. Want more heat use Grizzly Ghost Pepper. Don’t like slaw or broccoli salad switch it to your favorite pickles. Ingredients:
1 pound Oyster Mushrooms
1/2 teaspoon salt
1/8 cup Bear’s Pork Rub
4 Buns (we used brioche)
1/4 cup Kansas City Sweet BBQ Sauce
Your favorite Slaw or Broccoli Salad
Prepare:
Preheat your Smoker to 275 degrees
Directions:
Season the oyster mushrooms with Salt and Bear’s pork rub
Smoke for about 45-50 minutes
Remove from the smoker and using 2 forks, shred the mushrooms.
Heat a suate pan over medium-low heat and add the shredded mushrooms to the pan
Add the Kansas City Sweet BBQ sauce and cook for about 3-5 minutes
Set up your buns with slaw or Broccoli salad and top with the pulled Mushrooms
